Produced by a cooperative of 101 women in Brazil’s Minas Gerais region, Hippocampus opens with the crisp sweetness of red apple, followed by warm roasted nuts and a delicate chamomile finish. The natural process allows the coffee fruit to dry around the seed, amplifying its sweetness and creating a cup that is smooth, balanced, and quietly complex.
