I'm a nurse practitioner who drinks coffee like it's prescribed medication.
I've spent decades in high-stakes clinical environments—ICUs, ORs, overnight shifts—where coffee isn't a luxury, it's survival. But I noticed something: while we obsess over patient care, nutrition, sleep hygiene, we treat coffee like an afterthought. Grab whatever's in the break room, chug, move on.
That bothered me.
So I started exploring specialty coffee: real, thoughtful, intentional coffee. The kind where you know the farm. The kind that actually tastes different. The kind that makes 4 AM feel less like a punishment and more like a ritual.
I realized I wasn't alone. Every nurse, doctor, researcher, and high-performer I knew had the same complaint: "Why can't I find exceptional coffee that respects my time?"
White Matter Coffee is the answer.
Women are involved throughout the coffee journey: from cultivation and farm leadership to sourcing, roasting, entrepreneurship, and education. Yet the people behind a coffee are often invisible by the time it reaches the cup.
I wanted White Matter Coffee to do things differently.
White Matter Coffee is a woman-owned company. We partner with Copper Door Coffee Roasters, a woman-owned specialty roaster in Denver, and intentionally feature coffees from women producers, farms, and cooperatives around the world.
This is not about compromising on quality to support a mission. It is about finding exceptional coffee and making sure more of the women responsible for it are seen, named, and celebrated.

Meet the Founder

I’m Diane McLaughlin—a neuroscience nurse practitioner, researcher, educator, pilot, traveler, and lifelong student of coffee.
My career has been built around the brain: caring for critically ill neurologic patients, teaching clinicians, contributing to research, and constantly asking better questions. White Matter Coffee grew from that same curiosity—and from years of exploring coffee across countries, cultures, and continents.
Coffee has followed me through overnight shifts, early flights, research deadlines, new cities, quiet mornings, and conversations that changed the direction of my life. I created White Matter Coffee for people whose minds rarely sit still and who believe their daily rituals can still have meaning.
This is coffee rooted in science, built around connection, and powered by women.
